A Case of the Mondays!

Well, today turned out a lot different than I expected. I woke up my usual exhausted self after a busy weekend and all I wanted to do get back in bed after walking Rusty this morning but instead, I chatted with my best friend and planned a beach trip for August! I am so excited to get away (and I know she is too) so this is perfect timing!

After a hectic morning researching hotels/vacation options, I didn't have much time to get ready for work so what did I do? Throw on a dress! I feel like it's my go-to option since it's so hot/humid and today was no different! Apparently, the lightning/thunderstorm in Greensboro last night was so bad and lightning actually hit the building in the law firm where I work so bad that the "L" was burnt and thrown off the side of the building where the lightning hit.  The power was out at the office so on top of being in the dark, there was no AC and the building was beyond humid and it was definitely getting hard to breath for me. Almost everyone from the office left because it's hard to work at a law firm when you cannot access your computer since the power is out!! I ended up catching up with the paralegal of what needed to be done and what clients needed to be called and in that much time, we got word that the power would be back so I ended up staying in the office and getting a ton of work done!

I love this dress! SO comfortable, looks professional, and makes me feel circa 2011 skinny!

Southern Blog Society NC Meet-Up!

This past Saturday I participated in my very first blogger meet-up! I joined the Southern Blog Society this past spring when I was trying to grow my blog and increase followers and traffic on here.  I was excited when I got an email from the North Carolina rep for our local meet-up. It was actually held here in Greensboro and at my favorite bakery- Maxie B's! Maxie B's is a gorgeous bakery nestled in a strip of Battleground Ave. where you would least expect! My family actually got my law school graduation cake from there- my favorite is the Fresh Apple cake!

I have never really gotten into the blog world until earlier this year.  I was pretty nervous and didn't know what to expect since I'm still a novice blogger and really just found my blog identity after years of only blogging about the stresses and frustration over law school.  I was really excited to meet these ladies and talk about our blogs. We discussed how we got started and the focus of each of our pages and I definitely learned a lot from these two fabulous ladies! Grace at Haute Couture and Hannah and Thirsty World and how to do things a little different with my blog! I am definitely going to start using my Instagram account more after talking with these two!!

Definitely check out their blogs (I could literally spend hours reading/going through their older posts!)- Grace has an amazing fashion blog, which I love given my obsession with clothes hah, and Hannah's blog contains beautiful photography as well as a lot of information about the triad area as well as her growing bug collection!

Sunday Recipe (on Monday)- Mango Pie

Here we are for another Sunday Recipe! I learned how to make this amazing no-bake Mango Pie from my mom so many years ago and it's a staple dessert I make for large groups of Indians.  My momma raised me right and the Southern way- never go to anyone's home empty handed! SO, I ended up made this when I was in Detroit (AFTER I was sick, I could barely stand the day I made this so my mom helped out a ton) at the beginning of the month to take over to my brother's fiancee's house when we went for dinner one night.  We didn't eat it that night/I never heard anything back so I hope they enjoyed this amazingness. This recipe is fairly easy and straightforward (no-bake, yes!!!):

Ingredients 

• 1 can mango pulp
• 1 graham cracker pie crust (make your own or store bought- I used store bought because it was easier & quicker!)
• 1 packet unflavored gelatin (I got store brand but usually prefer the Knox brand)
• 1 brick of cream cheese

Method

1. Prepare the gelatin based on the directions on the package (usually boil 1/2C of water, add the pkg contents to the water and stir until dissolved, then cool). 
2. Mix the mango pulp, cooled gelatin mixture and room temperature cream cheese. I used an emmersion blender to make sure everything was combined evenly and the gelatin was evenly distributed.
    
3. Pour the mixture into the graham cracker crust.

4. Set the pie in the fridge for a couple hours. I left it in the fridge for about 3 hours and they looked perfect!

I Love You, Friday!

I love Fridays! I had such an exhausting week and I still never feel rested & refreshed when I wake up in the mornings but hopefully I can nap/rest this weekend and be ready for another work week! This morning wasn't as hot as the previous four days so Rusty and I spent some time out on the deck this morning and this little guy was LOVING laying out in the sun, just like his momma!

Fridays are always dress down days but I just wanted to find an outfit that was cool and comfortable yet appropriate for a law office.  I chose this old favorite dress and another favorite cardigan as well! I tried something different and attempted to curl my hair but it's just getting too long and heavy for any curls to stay in- at least I had some amazing waves later in the day!!

I am so ready for this weekend- tomorrow I'm attending my first blogger meet-up with the North Carolina Southern Blog Society at my favorite bakery here in Greensboro and then Sunday I am spending time with my parents and sister in Durham/Raleigh!

OOTD Thursday!

What a day! Maybe it's the heat, maybe it's my lack of sleep but I literally cannot keep my eyes open since I got home from work!! Today's outfit was so comfortable and fun but literally thrown together in 12 minutes hah!

I tried to do something different with my hair today because last night I put some mouse in it and scrunched and twisted it up in order to get some waves today and so when I took my hair down this morning, I used the diffuser on my blow dryer and the waves looked great but lasted only a few hours into my day! Sad times! I loved my shoes today though- they are a relatively new addition to my shoe collection and they have a really great heel (especially since I'm so short hah!)! I love the combination of this shade of pink with my favorite black top/blazer! My feet/knees were killing me though by the time I got home--a too fast run last night and then 3.5in heels all day= so much pain in my old bones!
